Pantry soup

1 large onion copped
4 cloves of garlic minced
pepper and salt

1 quart box of broth any flavor

6, 14.5 oz cans of veggies any will work.

1 bay leaf
1 teaspoon of basil

Cook the onion and garlic in a bit of oil until clear. Add the broth and veggies. I used 3 cans of stewed tomatoes, 1 of each corn, green beans and kidney beans. I added the juice from the tomatoes but rinsed the others.

Add salt, pepper and spices.

I figure if you use organic canned veggies and box broth it's natural. Also if you rinse canned veggies in removes most of the sodium so I rinse them well.

You can also add 1/4 cup rice, pasta, barley, lentils or half the broth and half V8.

Let simmer for about half an hour. May take up to an hour if you add lentils, rice, pasta or barley etc as they take a long time to cook

DH hates this soup because it normally gets created right before pay day because it's cheap. You can also add another can of beans and some V8 and chili spices to make the last half chili if you get bored with so much soup.
