The love of jello! Growing up my mom and dad made what we called knox blox. They’d make all different shapes, sizes and colors. Of course, I had to kick it up a notch.
Mia and I set off on our rainbow jello journey with a trip to the grocery store. We purchased one box of unflavored gelatin and three boxes of jello (the 6oz box). You’ll want to buy one red, one yellow and one blue. One of the greatest things about this project and dessert is that it is inexpensive but impressive!
I’ve posted the “recipe” below as well as a few pictures. I hope you and your family enjoys this as much as we do!
What you need:
- 1 6oz box of blue jello
- 1 6oz box of yellow jello
- 1 6oz box of red jello
- 1 1oz box unflavored gelatin (4 packets per box) You will need 3 packets.
- water and ice
- A large bowl
- 13×9 baking dish
Pour the box of blue jello and one package of unflavored gelatin into a large bowl. Mix together. Pour in two cups of boiling water and stir until the gelatin is dissolved (about two minutes). Pour in half a cup of ice (about 9 cubes from an ice maker) and stir until the gelatin starts to thicken. Pour into the 13×9 baking dish. Try to pop as many bubbles as you can. Place into the refrigerator to set (at least 30 minutes).
Once set, repeat the above steps with the yellow jello and then the red jello.

@ Anne Freitas: You’ll need the unflavored gelatin for consistency. If you don’t use it the jello will not hold it’s shape as well.

Was a great hit at Easter for my entire family! Thanks for the recipe! I had no idea that unflavored gelatin existed and that this is the KEY to making jello “finger friendly”!
PS my mom who is 65 yrs old says she use to drink unflavored gelatin as a teenager to help her nails grow!
